Moran left Grantham High School at the age of 15 to start a career as a chef. While still at school, he worked on weekends in the kitchen of the Parramatta RSL Club. Moran commenced his apprenticeship at La Belle Helene Restaurant, Roseville, on Sydney’s North Shore, and it was here that he practiced the art of classical French cooking.

“My dad, Jim, was a great support when I started my career as a chef. People often ask what got me into cooking and while I now have a great passion for it, the truth is, I hated school and needed a way out,” Matt says.
“Dad wouldn’t let me hang around doing nothing so every spare minute was spent looking for a job. Phone call after phone call, one interview to the next, and my dad drove me around to all of them. He didn’t love the idea of my leaving school but he was supportive and pragmatic and gave me his blessing to try a few things and see where my ambition could land.”

Moran is married to Sarah Hopkins and they are blessed with two kids Harry Moran and Amelia Moran. His wife Sarah was born in 1969 and is an Australian criminal lawyer and novelist. She is a lawyer with the Aboriginal Legal Service in Sydney and chairperson of Just Reinvest NSW, a not-for-profit organization that works to reduce the overrepresentation of Aboriginal and Torres Strait Islanders in the prison system.
As a novelist, her best-known book is The Crimes of Billy Fish. It was Highly Commended in the ABC Fiction Award and shortlisted for the Commonwealth Writers’ Prize in 2008. His food career began over 30 years ago as an apprentice at La Belle Helene, one of Sydney’s best restaurants at the time. He quickly rose to the role of Head Chef before taking the helm at Manfredi.
